I wanted to share this easy, quick recipe with all of you. These Coconut Almond Balls are amazingly scrumptious! I absolutely love coconut! I have always had a sweet tooth and these are one of my go to desserts to satisfy my cravings in a healthy way. In fact, I have a lot of different, decadent healthy desserts that I have prepared along my weight loss journey to ensure my continued success. This is a lifestyle, so the more satisfying recipes and tricks I have up my sleeve, the more I can reasonably make healthy eating a way of life no matter what life throws my way. Over the years, I have been able to find lots of healthy dessert alternatives that are not only delicious and nutritious, but at the same time do not feed my processed sugar cravings. Sometimes I pop a couple into a baggie to bring with me to social outings, so I don’t feel left out or deprived when everyone else around me are indulging with desserts that are full of processed sugar, flour and oil. My favorite way to enjoy them is with a cup of hot herbal tea or coffee. It feels good that I can eat a couple of them without any guilt, knowing I am also taking care of myself, my health and my body while enjoying a soul nourishing treat.
I have shared these Coconut Almond Balls with my girlfriends, my book group and house guests on many occasions and each time I have gotten rave reviews. Actually I am embarrassed to admit, they are a little hard to share since they are so amazing. I love that they are quick and easy to make. After you process the ingredients as directed, they are ready to enjoy if you like. There is no need to wait extra time for them to be finished. If I am really rushed and don’t want to mess with taking the time to roll them into balls, I transfer the finished product into one of my glass containers with a snap on lid. Then, with slightly wet fingers, I press the mixture firmly into the glass container and cut them into small square pieces. Another bonus is these freeze really well (although mine rarely make it to the freezer).

Coconut Almond Balls
Yield: About 10 to 12 balls depending on size preference
2/3 cup raw almonds
2 1/4 cups unsweetened coconut flakes
2 tablespoons maple syrup
1 – 2 tablespoons coconut oil (optional)
1 1/2 teaspoons vanilla extract
1/2 teaspoon sea salt
Place the raw almonds in the food processor and process until they are finely ground. Remove the almond mixture from the container and set aside in a bowl. Add the coconut flakes to the container and process to make a powder like consistency. Return the almonds back into the container and pulse to combine. Next, add the maple syrup, coconut oil, vanilla extract and sea salt, and process again to blend well. The mixture should be sticky and moist. Feel free to add a few drops of water at a time and process again, repeating until you reach the desired consistency. With clean hands, roll the mixture into balls to whatever size you wish. Cover and refrigerate. They are even better after some time in the fridge as they will harden.
