Happy, Healthy Kitchen – Yummy Homemade Soups to Warm Your Soul
I vary my soups from week to week depending on what veggies I have on hand and also what is in season. I have to admit I am a huge fan of potatoes and more often than not, my soup will include either red, gold or sweet potatoes. The soup in my fridge now is one I made up which includes onion, carrot, celery, leek, butternut squash, crimini mushroom, corn and little red potatoes. I love to use my immersion blender to blend about half of the pot into a thicker, creamy but still chunky consistency. This time I added about one cup of cashew cream to make the soup even creamier like a chowder. It turned out delicious! Whenever I create a soup recipe that is a definite winner, I make sure to write down all the ingredients and spices I used so I can make it again.
Speaking of chowder, the soup I made last week was a new recipe I tried from Gena Hamshaw of the Full Helping. It is her Creamy Vegan Cauliflower Corn Chowder. Oh. My. Goodness. It was fantastic and SO tasty. In fact, I have all the ingredients to make it again the end of this week. YUM! I hope you try it out and enjoy it as much as my family and I did! Bon appetit!
